We're running two environments in parallel for now. Curious what others have done and what you'd do differently.

Great question. We ended up with a hybrid approach and it's held up.
Following, we're about to start the same thing.
Make sure someone owns integrations after go-live. Ours went orphaned for a while.
Don't skip the cutover rehearsal. Do two if you can.
